The clock starts the moment it comes off the truck.

Last time, I promised to walk through one product from start to finish. Here it is: a scenario we see in stores all the time.
It's 7 a.m. on a Tuesday. The fish department manager is unloading a fresh delivery of salmon. Clear eyes, firm flesh, the best-looking batch this month.
Anyone who has worked fresh knows what happens next. From the moment salmon arrives, the clock is running. Day one, it's premium product. By day three, it's getting marked down. By day five, it's on its way to the hot food counter.
Tuesday morning: let people know
At 8:30, the manager snaps a few photos of the fish on ice. By 9, the salmon is in that day's Mini Flyer alongside a dozen other fresh arrivals. Before 10, it's live on the store's website, in WeChat groups, on social, and in front of GoFlyer users who are actively looking for deals.
Not long ago, this salmon would have waited for next Thursday's flyer. By then, there'd be nothing left worth promoting.
Tuesday night: the numbers come in
Plenty of people saw it. Very few saved it, and even fewer added it to a shopping list.
As we discussed last time, that's the signal. It isn't a visibility problem. People saw it and weren't moved. A quick check shows our fillet at $10.99/lb, the store across the street at $9.99, and one a little further out at $7.88. On the shopper's comparison list, we're nowhere near the top.

Wednesday: a different play
The manager doesn't match the price. His view: "Chasing price just means cutting price, over and over. What's the point? At the end of the day, we're here to make money."
Instead, the whole fish gets broken down. Fillet is cut into two- or three-person portions at the regular price. Steaks go out on their own. Belly, heads and bones are priced by the pound at around a dollar. The weather has turned cool, which is exactly when people want fish-head soup and hot pot.
Heads and belly were never where the money was. But unsold, they used to end up in the bin. Now they're the reason people come in, and on the way out, they pick up fillet.
A second Mini Flyer goes out Wednesday afternoon, and saves and shopping-list adds start climbing.
The weekend: people show up
Several customers walk straight up to the counter, hold out their phones and say, "This one." Heads sell out first, then belly, and a good share of the fillet goes with them. At Sunday's count, shrink on this batch is well below normal.
The review: see how it went, then adjust
Before the next delivery, the team looks at how the last batch actually sold. The manager puts it simply:"Let's see what worked, then adjust."
Cutting is planned in advance. Posting moves up to before 9 a.m. And what gets featured first is based on what local shoppers are searching for that week.
It's not just salmon,Produce is the same story, only faster.
Buyers are at the Ontario Food Terminal before sunrise every day. One morning it's an exceptional lot of mangoes; the next, a great price on gai lan. Good product shows up constantly, but it doesn't wait.

Whoever gets it in front of shoppers first sells the best product at its best. Inventory turns faster, less goes in the bin, and the store builds an edge that compounds week after week.
The problem has always been production. A simple specials graphic used to mean briefing a designer. It cost money, took time, and burned energy on back-and-forth. By the time it was ready, the product often wasn't at its peak anymore.

That's the step GoFlyer is built to remove. Our tools are simple enough that store staff can put together a clean Mini Flyer or a handful of daily specials in minutes, pick the products in our dashboard, and publish to their website, social channels and the GoFlyer platform in one go.
The product arrives. Shoppers see it the same morning.
The takeaway
One case of salmon over seven days looks like a small thing. But it runs the whole loop: receiving, deciding, publishing, reading the data, adjusting, publishing again, reviewing.
Grocery has never been won in a single week. It's won one delivery at a time, getting a little more right each cycle.
Coming next
The data is there. But will department managers actually use it? Next time: how to bring these numbers into the weekly department meeting, instead of leaving them sitting in a dashboard.
